The Côtes Catalanes ‘Esprit' from Domaine de l'Horizon combines Macabeu and Muscat à petits grains in a blend that favors finesse. The vines, trained in goblet between 30 and 60 years old, grow on calcareous and schist soils of Roussillon. Spontaneous fermentation takes place in large oak barrels and demi-muids, followed by aging for nine months on fine lees. The nose reveals floral and citrus notes enriched by the aromatic touch of Muscat, while on the palate the freshness supports a lively and well-balanced sip. Excellent paired with a seafood risotto
