
Cailloux Vineyard Cayuse 2022
The Syrah 'Cailloux' from Cayuse Vineyards originates in the Walla Walla Valley, from the first vineyard planted in the pebble area in 1997. A signature of Christophe Baron and his biodynamic viticulture, it is the only Syrah from the winery co-fermented with a small part of Viognier. It ages for eighteen months in puncheon, the very old and now neutral American barrel. On the nose, it intertwines dark fruit and flowers, including blackberry, plum, jasmine, and orange blossom, with typical smoky and meaty hints, then sweet notes of black olive, pepper, and a mineral background of gravel. On the palate, it has good structure, is fresh and silky, with fine tannins and a long, spicy finish. A Syrah in the Rhône style, excellent with American-style barbecue or a fine ribeye steak
